For some reason, most of my life I had such a mental block when it came to making homemade salad dressings, as if it was some mysterious feat. It’s not difficult or time consuming at all, and a simple dressing can be whipped up in less than 10 minutes! This Creamy Avocado-Parsley Dressing has zippy flavors and a creamy consistency, making it a perfect dressing for a variety of different salads!
There has never been a salad dressing that I’ve purchased at a store that I liked. Not a single one, ever. I wasn’t much of a salad eater until recently, as I had grown up thinking that all salads had to be boring piles of raw veggies and a subpar dressing to attempt to dress it up. Not so! My salads are more like Power Bowls, packed full of greens, beans, whole grains, and a rainbow of veggies. To anyone who thinks that vegans walk around hungry, let me assure you — I have to roll away from the table after one of my salads!

No parsley?
No problem! I’m not sure if it’s just me but I don’t always have parsley on hand. I always have cilantro, though! Feel free to sub cilantro in place of the parsley. You might have to adjust the other ingredients to-taste, but it will still be just as good!
Creamy Avocado-Parsley Dressing
Ingredients
- ½ of an avocado
- 1 clove garlic minced
- 2 Tbsp Vegenaise
- ¼-½ cup cold water
- ¼ cup parsley
- 2 tsp lemon juice
- few grinds of salt to taste
- few grinds of pepper to taste
Instructions
- In a food processor add all ingredients but gradually add water several Tbsps at a time. Process, stopping occasionally to use a spatula to scrape sides. Keep processing and adding water until dressing is a desired consistency.
