Silky Vegan Chocolate Mousse

I love the silky texture of chocolate mousse and it’s one of my favorite desserts, but I don’t love how sickeningly sweet the restaurant desserts are! There’s also tons of unhealthy ingredients in a “typical” chocolate mousse: a stick of butter, several eggs, a couple cups of heavy cream. None of that is going to make you feel energized after eating! This Silky Vegan Chocolate Mousse is a totally different story; incredibly decadent, silky smooth, rich and creamy, and…healthy?! It’s hard to believe since it’s so good, but this is one dessert you can enjoy without feeling guilty (or queasy) after eating!

I’ve made chocolate mousse using avocados before and it’s not my favorite, to be honest. The thickness is difficult to dial in and it doesn’t take long for the avocado to oxidize and have that funky brown flavor of over-ripe avocado. I wanted a silky chocolate treat but I wanted it to be easy to measure out, rather than tinkering with the measurements of everything. So I thought I’d try it with silken tofu since the texture is, well, silken. To my pleasant surprise, I nailed this recipe first try (this never happens) and I enjoyed it so much that I ate almost all of it in one sitting! (Oops! Good thing it’s healthy!)

Tips for Success

  • Choose your own sweet adventure! I absolutely cannot stand how sweet typical desserts are and I prefer this mousse to be only slightly sweet, not sickeningly sweet. Add maple syrup to your own sweet-tooth preference, starting with a little and adding more if you want a sweeter version!
  • Only use Silken tofu. Anything firmer won’t be silky smooth like Silken!

What about the soy in tofu?

Tofu is an excellent source for protein, vitamins, and minerals. Tofu contains ample amounts of all 9 amino acids making it a solid complete protein! It’s rich in calcium, manganese, selenium, phosphorus, copper, magnesium, iron, and zinc. But all of this seems to be overshadowed by the misconception that soy is rocket fuel for breast cancer. This couldn’t be further from the reality! Soy consumption has been shown to greatly reduce breast cancer occurrence, reoccurrence, and death.

Soybeans contain natural plant compounds called isoflavones, which is responsible for most of the health benefits. Isoflavones are phytoestrogen, but don’t let the name fool you: phytoestrogen is much weaker than the mammalian estrogen and doesn’t function entirely as mammalian estrogen; phytoestrogen also has anti-estrogenic properties.1,2 What does that mean? When you consume phytoestrogens, your body produces less active forms of estrogen and therefore lowers breast cancer risk; an anti-estrogenic effect. Phytoestrogens can also help reduce menopausal hot flashes and potentially increase bone density; a pro-estrogenic effect.3

Tofu also helps keep our bones strong and healthy! Studies have found that soy isoflavones may reduce the risk of bone loss and fractures by increasing bone mineral density.4 This is incredibly important for postmenopausal women when bone loss and osteoporosis can occur due to to the decline in estrogen. 5,6 Tofu is an excellent source of calcium, magnesium (which helps to regulate calcium levels), and phosphorus (another mineral that helps build and maintain strong bones)7

And that’s not all! Isoflavones can reduce blood vessel inflammation and improve their elasticity, reducing risk of stroke and heart disease—the #1 killer in the U.S.  

Soy foods help fight cancer, reduce risk of heart disease, help with menopause symptoms, help build strong bongs, and is loaded with protein, vitamins, calcium, and iron. All of these health benefits can be packaged into a tasty, healthy, chocolate dessert, believe it or not! With this Chocolate Mousse, you can have your cake and eat it too!

Ingredients

Units Scale

Chocolate Mousse

  • 16 oz package of Silken tofu (must be silken!)
  • 1/4 cup + 1 tbsp cocoa powder, unsweetened
  • 3 Tbsp peanut butter or almond butter
  • 24 Tbsp maple syrup (to sweetness preference)
  • 1 tsp lemon juice
  • pinch of sea salt

Options For Serving

  • Fresh fruit: strawberries, raspberries, blueberries
  • cacao nibs
  • dusting of cocoa powder
  • small pinch of sea salt for garnish

Instructions

  1. Drain silken tofu and place in a food processor. Add in everything else under “Chocolate Mousse” and process until smooth, stopping a couple times to scrape sides. Enjoy immediately or refrigerate before serving. Option to garnish with fresh fruit of choice, cacao nibs, a sprinkle of cocoa powder, and a small pinch of sea salt. Enjoy!
