Silky Vegan Chocolate Mousse

Ingredients

Chocolate Mousse

  • 16 oz silken tofu (must be silken!)
  • ΒΌ cup + 1 Tbsp unsweetened cocoa powder
  • 3 Tbsp almond butter or peanut butter
  • 2-4 Tbsp maple syrup
  • 1 tsp lemon juice
  • pinch of sea salt

Options For Serving

  • Fresh fruit: strawberries, raspberries, blueberries, or pomegranate seeds.
  • cacao nibs
  • dusting of cocoa powder
  • small pinch of sea salt flakes

Instructions

  • Drain silken tofu and place in a food processor. Add everything else under "Chocolate Mousse" and process until smooth, stopping a couple times to scrape the sides.
  • Serve immediately or refrigerate. Option to garnish with fresh fruit, cacao nibs, a sprinkle of cocoa powder, and a small pinch of sea salt.

Notes

This silky vegan chocolate mousse keeps in the refrigerator in a well-sealed container for up to 3 days. Stir before serving. Do not freeze.
