Almond Vanilla Granola (light sugar)

Ingredients

  • 4 cups Rolled Oats not quick-cook
  • cup Olive Oil
  • ¾ cup Almonds whole or roughly chopped
  • ½ cup Walnuts
  • cup Maple Syrup or Honey
  • 2 tsp Vanilla extract
  • ¼ tsp Salt
  • ½ tsp Cinnamon
  • ¼ cup Pepitas

Instructions

  • Preheat oven to 350°.
  • In a large bowl, combine all ingredients except pepitas and stir to combine.
  • Bake granola for 10 minutes. Remove and stir, adding in pepitas.
  • Bake another 5-10 minutes, remove when granola just begins to crisp and turn golden but not brown. Keep an eye on this and don't overcook, some ovens will cook faster!

Notes

*Store granola in a well-sealed container in the pantry to keep it fresh.
