Ingredients
4cupsRolled Oatsnot quick-cook
⅓cupOlive Oil
¾cupAlmondswhole or roughly chopped
½cupWalnuts
⅓cupMaple Syrup or Honey
2tspVanilla extract
¼tspSalt
½tspCinnamon
¼cupPepitas
Instructions
Preheat oven to 350°.
In a large bowl, combine all ingredients except pepitas and stir to combine.
Bake granola for 10 minutes. Remove and stir, adding in pepitas.
Bake another 5-10 minutes, remove when granola just begins to crisp and turn golden but not brown. Keep an eye on this and don't overcook, some ovens will cook faster!
